MCC’s Classical Cuisine Dinner on December 4 Supports Culinary Programs

Manchester, CT – (November 8, 2012)…There’s no better way to start the holiday season! On Tuesday, December 4, students from MCC’s culinary arts programs will prepare and serve a seven-course gourmet meal featuring salad, soup, appetizer, sorbet, entrée, cheese and dessert. This special evening will begin at 6 p.m. in the dining room of the college’s Culinary Arts Center located on the second floor of the Lowe Student Services Center. Glenn Lemaire ‘74, Professor Emeritus of Hospitality Management and the evening’s sommelier, will select wines to accompany six of the meal’s seven courses.

The menu for the Classical Cuisine Dinner includes poached pear salad, shiitake consommé, seared scallops with baby haricots verts, cranberry champagne granita, rack of lamb served with pommes Anna and baby root vegetables, a selection of artisan cheeses, and a dessert trio of vanilla genoise, vanilla bean mousseline and pink grapefruit gelee. Proceeds from the dinner will support participation of the college’s cooking and ice-carving teams in local and regional competitions.

The award-winning Hospitality Management and Culinary Arts Department at Manchester Community College offers students a choice of degree and certificate programs in the areas of culinary arts, foodservice and hotel-tourism. Both the Culinary Arts and Foodservice Management associate in science degree programs have been granted exemplary status by the American Culinary Federation Education Foundation (ACFEF).
